Sometimes when I send off a plane of my own, I have to go when it is in mid-flight. Will i be able to service it later when I get back? If so, how long do I have before it dissapears off the "My Flights" list?

Since your question is based upon you "sending flights" you don't need to "service" it, but you do need to land it. IF you logout and your flight(s) return you will have different time spans before your plane just goes back into your hangar, without you landing it, collecting rewards, and returning to Hangar. The time spans depend upon what plane it is as in: 6min, 20min, 1hr, 4hr, 8hr, 12 hr.

So if you send a 6 min plane, have to logout, and return an hr later, your plane may be returned to your hangar already. If you send a 1hr plane, logout out 20 mins later (which you still have 40 mins remaining before you have to land it) and return an hr later, you may still be able to land it and collect. The longer plane time, the longer you have to be away before it goes back into your hangar. When your planes return to you for you to land them, they will "fly" around for a bit before return to hangar.

I have sent out SuperTurbos before which are 4 hr planes, had to logout, returned 6 hrs later and was still able to land and collect rewards.

You should also know that if your plane(s) do return to your hangar without you collecting rewards, you will get any coins that it costed you to send out returned to you, but your hearts and ep and extra coins will be lost.

To know EXACTLY how long you have with each plane, only thing I can suggest is contacting support and they may be able to tell you, they may not too. With this being said, here is what I'd like to see in FAQ:

How long does it take for each plane to return to hangar after it returns to our airport? Include all the planes!
